I get requests to bake family favorite sweet treats every year but this one is my all-time fave. Even if you are not a fan of drinking eggnog, you'll love the taste in these.

How Long Can They Be Stored?

They can be stored in the refrigerator for up to a week. But you can get a head start on your holiday baking and freeze them for up to three months. Store them in one layer in a plastic container or individually in freezer bags.

How To Package Mini Cranberry Eggnog Loaves For Gifts

Wrap each mini cranberry eggnog loaf in a festive cellopane bag. Set it inside a festive coffee mug with either a sample package of holiday blend coffee or a gift certificate to their favorite coffee shop. Add a candy cane and tie a pretty gift tag on the handle.

What Ingredients Will I Need?

Pictured below are the ingredients you'll need to make this yummy eggnog bread. You can use fresh or frozen cranberries, thawed, and sliced in quarters or in half. I should also point out that I use regular eggnog in this recipe rather than light.



Eggnog Bread

1 cup granulated sugar
1 large egg
1/4 cup butter or margarine, melted
1 1/2 cups eggnog
3 cups all-purpose flour
1 tbsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground cloves
1/4 tsp allspice
1 cup chopped frozen or fresh cranberries

I will admit this nutmeg eggnog icing is on the sweet side. Icing the eggnog loaves is optional, you could sprinkle them with icing sugar instead.



Eggnog Icing

3 cups icing (confectioner's) sugar
4 1/2 tbsp butter or margarine softened
3 tbsp eggnog
Nutmeg, sprinkle

This recipe makes eight individual loaves or one regular size loaf. You can see from the photos below that they fill the pans and rise quite high when they bake.

How To Make Mini Cranberry Eggnog Loaves

  1. Chop frozen or fresh cranberries into quarters or halves and set aside.
  2. Beat sugar and egg in a mixing bowl.
  3. Beat in melted butter.
  4. Stir in eggnog.
  5. Sift flour, baking powder, salt, cinnamon, nutmeg, ground cloves, and allspice over eggnog mixture.
  6. Stir until moistened.
  7. Mix in cranberries.
  8. Turn into a greased mini loaf pan.
  9. Bake in 350℉ (175℃) oven for about 45 minutes or until an inserted toothpick comes out clean.
  10. Let stand 15 minutes and remove from baking tin to cool on a rack.


How To Make Eggnog Icing

  1. Beat icing sugar, softened butter or margarine, and eggnog in a bowl
  2. Add more icing sugar or eggnog as necessary until spreading consistency.
  3. Spread evenly on top of each mini loaf.
  4. Sprinkle lightly with nutmeg.

Eggnog Bread
